My grand daughter is 11 now. This is what we bake. Have alot of fun when we do. This is great to bring to parties. Any one that like lemon. They will have this recipe in their Kitchen Box. I also make these for holidays. Lemon Lovers This is your Dish. Even if you are not you will with these little treats Enjoy they are so moist.They are just right in size just a PINCH full.

Ingredients For lemon drops

  • 1 box
    yellow cake mix
  • 1 box
    3 1/2 ounce instant lemon pudding mix
  • 4
    eggs
  • 3/4 c
    vegetable oil
  • glaze
  • 4 c
    powder suger
  • 1/3 c
    fresh lemon juice
  • 1
    lemon zested
  • 3 Tbsp
    vegetable oil
  • 3 Tbsp
    water
  • PREHEAT OVEN FOR 350 DEGREES F.

How To Make lemon drops

    Spray miniature muffin pan with cooking spray. Combine the cake mix, pudding mix, eggs, and oil and blend well with electric mixer until smooth

    Pour a small amount of batter,filling each muffin tin halfway. About 10-12 min. Turn out onto a towel.

    Glaze: Sift the sugar into a mixing bowl. Add the lemon juice,zest,oil and 3 tablespoons water. Mix with a spoon until smooth.

    With fingers,dip the cupcakes into the glaze while they are still warm,covering as much of the cake as possible. Place on wire rack(s) with wax paper underneath. Let the glaze set. About 1 hour before you store them in a container with tight fitting lids.
