Ingredients For ginger bread cookies (no molasses)

  • HOMEMADE MOLASSES
  • 1 1/2 c
    dark brown sugar
  • 1/2 c
    hot water
  • stir dark brown sugar and water to mix well, then let sit while you prepare other ingredients for baking your cookies, stir well before using!
  • COOKIES
  • WET INGREDIENTS
  • 1 1/2 c
    dark brown sugar
  • 3 stick
    real butter, softened
  • 1 1/2 c
    homemade molasses
  • 3
    eggs
  • DRY INGREDIENTS
  • 6 3/4 c
    all purpose flour
  • 1 1/4 tsp
    salt
  • 3 1/2 tsp
    baking powder
  • 4 1/2 tsp
    ground cinnamon
  • 4 tsp
    ground ginger
  • 3 tsp
    ground cloves
  • 1 1/2 tsp
    ground nutmeg
  • 1 1/2 tsp
    baking soda
  • 1/4 tsp
    black pepper
  • ICING FOR COOKIES
  • 4 c
    powder sugar
  • 4 Tbsp
    milk
  • 4 Tbsp
    corn syrup, light
  • 2 tsp
    almond or vanilla extract

How To Make ginger bread cookies (no molasses)

    First put all the dry ingredients except sugar in to a bowl and sift. You will see here all my dry ingredients before I sift them.

    Next start by creaming butter and dark brown sugar.

    Keep mixer going and scraping sides down add the eggs one at a time until mixed well, then add the homemade molasses, start adding dry ingredients, add approximately 3 cups if possible and then remove from stand mixer and pour in rest of flour and try to stir somewhat.

    Pour out on to your table and just kinda knead the dough till its completely mixed.

    Try to roll your dough in to much better sized logs than I did lol and then put in the fridge till tomorrow.

    Preheat the oven to 375 and begin slicing your logs of cookie dough.

    Remember if you want to double these and you made big logs like I did, just cut your pieces in half like this.

    You'll get lots of cookies and they make great gifts.

    Bake for 8 or 9 minutes just depends on your oven and pans.

    This makes a nice big batch of cookies, two gallon sized bags full.

    Next the icing. Mix together the powder sugar and the milk until well incorporated, then add the corn syrup and extract mix well. If to thick add a little more corn syrup. Dip cookies until coated, you may need to use a small spatula or spoon to spread evenly. That's it Cookies Galore!!
