Ingredients For frosted rhubarb cookies

  • 1 c
    shortening, butter flavor
  • 1 1/2 c
    brown sugar
  • 2
    eggs beaten
  • 1 tsp
    vanilla
  • 3 c
    flour
  • 1/2 tsp
    baking soda
  • 1/2 tsp
    salt
  • 1 tsp
    cinnamon
  • 1 1/2 c
    rhubarb diced
  • 3/4 c
    coconut

How To Make frosted rhubarb cookies

  • 1
    cream together shortening, brown sugar, and vanilla. Add beaten egg. Mix well. Add in dry ingredients. Mix to combined. Fold in rhubarb and coconut. Drop onto greased baking sheet by rounded tablespoon. Bake for 10-14 minutes. or till golden brown. 350 degrees When cooled top with either vanilla or cream cheese frosting.
