These sound great. You could up the healthy on these a little by substituting white whole wheat flour for all-purpose. Source: Woman's Day 10/12/93

Ingredients For date-oatmeal cookies

  • 2 1/4 c
    uncooked quick oats
  • 1 c
    crushed bran flakes cereal
  • 1/4 c
    all purpose flour
  • 1/2 tsp
    baking soda
  • pinch
    of salt
  • 1 1/2 stick
    butter (3/4 cup), at room temperature
  • 1 c
    packed dark brown sugar
  • 1 lg
    egg
  • 2 tsp
    grated lemon peel
  • 1 pkg
    (8 oz) chopped dates

How To Make date-oatmeal cookies

    Heat oven to 350 degrees F. Lightly grease cookie sheets or line with parchment.

    Mix oats, bran flakes, flour, baking soda and salt in a bowl with a fork.

    Beat together butter and brown sugar in a large bowl with an electric mixer until pale and fluffy.

    Beat in egg and lemon peel until blended.
  • 5
    Stir in flour mixture, then dates until blended.

    Drop tablespoonfuls, 2" apart on prepared cookie sheet.

    Bake 10 minutes or until browned around edges. Cool cookies briefly before removing to wire rack to cool completely.
