Once you try these great cookies...you will think you died and went to heaven ! Have you noticed, it Seems like everything is bigger & better in the great state of Texas. When was traveling in the Texas panhandle a couple years back, at night .the only thing I could see for miles & miles, was the road & the sky with a million stars. To many count. I must have been the only driver on the road. ..Around day break, I pulled up at a restaurant, needed grub and fuel. Then had my first taste, of a COWGIRLCOOKIE ! ... BAM!.. I'm in love! Back on the road,... with a bag cookies and the recipe !

Ingredients For cowgirls trail cookies

  • 2 c
    old fashioned oats
  • 2 c
    white flour
  • 1/2 tsp
    baking powder... and salt
  • 3/4 tsp
    baking soda
  • 1/4 tsp
    ground cinnamon
  • 3/4 c
    softened unsalted butter
  • 1/4 c
    crisco
  • 1/2 c
    lt. brown sugar (packed)
  • 1/3 c
    white sugar
  • 2 lg
    eggs - room temperature
  • 1 tsp
    vanilla - extract
  • 3/4 c
    chocolate chips
  • 3/4 c
    peanut butter- smooth
  • 1 c
    chopped walnuts

How To Make cowgirls trail cookies

    In a large bowl combine the oats, flour, salt, baking powder, baking soda, salt, baking soda, and cinnamon. .... Mix well. In a separate bowl, beat the butter,shortening, and sugars with an electric mixer for 2 minutes. Beat in the eggs one at a time. Blend in the vanilla. Using a wooden spoon, stir in the dry mixture,about a half at a time. Add the chocolate chips and walnuts. Stir until evenly mixed. Cover and refrigerate for one hour . While waiting preheat the oven to 350 F. Lightly butter two large, shiny baking sheets or just line them with parchment paper.

    Using - 1/2 cup of dough per cookie, shape the dough into balls and place them on the baking sheet, leave 2 1/2 inches in between cookies. Flatten the cookie balls into a 1/3- inch-thick disks with your fingers. Bake one cookie sheet at a time on the center rack for 13 to 14 minutes, turning the cookie sheet 180 degrees midway through the baking time. When done the cookies will have browned very lightly and still look moist beneath the surface. DO NOT OVER BAKE! Take out of oven, and let cool for 2-3 minutes on the baking sheet. Transfer cookies to a rack to cool completely. If you are using only one baking sheet, let it cool between batches....VERY IMPORANT ! Makes about a total of 24 , great cookies.!

    VARIATIONS: 1...COCONUT COWGIRL COOKIES Add one cup of flaked sweetened coconut to the dough, along with the chocolate chips. 2....BANDANA COWGIRL COOKIES omit the chocolate chips and substitute 1 cup of white chocolate chips and 1 cup of craisins. The white chips along with the, red craisins suggest a RED BANDANA !! 3...PEANUT BUTTER COWGAL COOKIES Omit the chocolate chips and substitute 2 cups of peanut butter chips. Or use 1 cup of each chocolate chips and peanut butter chips.....YUM!
