My mother-in-law gave me this recipe when I was dating her son. That was a LONG time ago! ha Sometimes I add about a cup and a half of chocolate chips and a cup of pecans to this recipe. This is a big request from the family.

Ingredients For cowboy oatmeal cookies

  • 2 c
    shortening
  • 2 c
    brown sugar, firmly packed
  • 2 c
    sugar
  • 4
    eggs
  • 3 c
    flour
  • 1 tsp
    vanilla
  • 3 c
    oats, quick cooking or regular
  • 2 tsp
    baking soda
  • 1 tsp
    salt
  • 2 c
    coconut (optional but i use it)

How To Make cowboy oatmeal cookies

    Mix shortening, sugars,then eggs.

    Mix in separate bowl flour, oats, baking soda,and salt.

    Slowly add the dry ingredients to the sugar mixture mixing as you add. Then add vanilla and coconut. (Two cups of coconut may be too much for your taste, but a little or a lot it goes GREAT in here!)

    Drop heaping tablespoons of dough (or use cookie scoop) onto cookie sheet. I make them large size. Bake at 375* for 10 mins.
