This recipe is a messy one to make but oh so good. Living in Arizona, we have access to good quality dates. This is a must have on our Christmas goodie tray.

Ingredients For casserole cookies

  • 2
    eggs, well beaten
  • 1 c
    sugar
  • 1 c
    dates, snipped
  • 1 c
    walnuts, chopped
  • 1/4 tsp
    almond extract
  • 1 c
    coconut, flaked
  • 1 tsp
    vanilla extract

How To Make casserole cookies

  • 1
    Beat 2 eggs well. Add sugar and beat until fluffy. Stir in remaining ingredients and pour into un-greased 2 quart casserole.

    Bake at 350 degrees for 30 minutes. Remove from oven and while hot, stir well with wooden spoon. Cool.

    Form into small balls and roll in granulated sugar. Dry on waxed paper. Store in airtight container.
