Another heirloom recipe from my Aunt Alice. Her notes say: "Everybody loves this cookie. Very yummy. Looks fancy too." Once again I've posted the original drawing that accompanies her recipe.

Ingredients For aunt alice's lemon squares

  • 1 c
    butter, melted
  • 2 c
    plus 4 tablespoons flour
  • 1 scant c
    confectioner's sugar
  • 4
    eggs
  • 2 c
    granulated sugar
  • 1 tsp
    baking powder
  • 6 Tbsp
    lemon juice
  • extra confectioner's sugar for garnish

How To Make aunt alice's lemon squares

    Combine butter, 2 cups flour and 1 cup confectioner's sugar.

    Pat into a buttered 9x13" pan and bake for 20 minutes in preheated 350°F oven.

    While crust is baking, beat together eggs, granulated sugar, baking powder, remaining flour and lemon juice.

    Pour over baked crust and bake 30-35 minutes more. Let cool, sprinkle with confectioner's sugar. Cut into squares.
