I used to make a fudge something like Persian or Russian, but the recipe was irretrievably lost in Katrina. After experimenting for a while (of course, consuming all my mistakes) and with my family's blessing, I came up with this reasonable facsimile. If pecans are used, it tastes similar to pralines, but I've also used almonds and cashews, with good results.

Ingredients For new orleans microwave fudge

  • 1 c
    light brown sugar, packed
  • 2 c
    granulated sugar
  • 1/2 c
    sweetened condensed milk
  • 1/2 c
    evaporated milk
  • 1 tsp
    vanilla extract (or almond if almonds used)
  • 1 pinch
    salt
  • 1/3 stick
    butter
  • 1 c
    chopped nuts
  • 1 Tbsp
    corn syrup, light

How To Make new orleans microwave fudge

    Combine all ingredients except nuts in a VERY LARGE microwaveable bowl. Cook on high power for 14-17 minutes (depending on wattage - 14 works for mine) stirring well every 2-4 minutes.

    Remove from microwave, add nuts, and beat until thick (approx. 5 minutes).

    Pour into a greased glass/Pyrex 9 inch square (or similar size rectangular) pan, and cut when set.
