too much chocolate? cake

My fiance isn't a chocolate eater, which is great because that is more for me! He seems to think there is too much chocolate in this cake, but I think it is amazing. It is really, really rich. Icing recipe came from a friend's mom, so I can't take credit for that wonderful addition to the cake.

Ingredients For too much chocolate? cake

  • CAKE
  • 1 pkg
    chocolate cake mix
  • 1 4oz pkg
    instant chocolate pudding mix
  • 1 to 2 c
    chocolate chips (to taste)
  • 1/2 c
    strong black coffee
  • 1/3 c
    applesauce, unsweetened
  • 16 oz
    sour cream
  • 3
    eggs
  • CHOCOLATE SOUR CREAM ICING
  • 1 c
    chocolate chips
  • 1/4 c
    butter (not softened)
  • 1/2 c
    sour cream
  • 1 tsp
    vanilla
  • 1/4 tsp
    sea salt
  • 2 1/2 c
    confectioners sugar (may need up to a 1/2 cup more depending on consistency)

How To Make too much chocolate? cake

    Preheat oven to 350 degrees and grease & flour a 10 inch bundt pan.

    In a large bowl, combine cake mix, pudding, eggs, sour cream, applesauce and coffee until well blended. Fold in chocolate chips. Pour batter into prepared pan and bake for 1 hour. Cool about 10-15 minutes in pan then move to a cooling rack. Cool completely before frosting.

    To make the icing Melt the chocolate chips and butter in a double boiler. Remove from heat and pour into a large heat safe mixing bowl. Add the sour cream, vanilla and salt and beat with a mixer. Slowly beat in the confectioners sugar until it reaches a good spreading consistency.
