This is an excellent and easy cake. Even great as a breakfast coffee cake.

Ingredients For rhubarb cake

1/2 cmargerine or butter

1 1/2 cbrown sugar

2eggs

2 cflour

1/2 tspsalt

1 tspbaking soda

1/2 cmilk

2 tspvanilla extract

2 cfresh or frozen rhubarb diced fine

1/2 cwhite sugar

1 tspcinnamon
How To Make rhubarb cake

1Cream shortening, sugar, eggs; then alternate dry ingredients with milk. Add vanilla and rhubarb. Mix well, pour into a greased 9 x 13 inch cake pan. Sprinkle the top of batter with 1/2 cup white sugar and 1 tsp cinnamon mixed. Bake at 350F for 30 - 35 minutes.
