I have not yet tried this recipe- I was just so stoked to see it featured on Raw for Vitality that I had to get it saved here before I lost it! lol RAW CHEESECAKE RECIPE! http://www.facebook.com/pages/Rawforvitality/177654739026014 raw cheesecake is high in calcium, magnesium, protein, and rich in mineral copper. Ingredients For raw nut-cheese cake (vegan)

  • 2 c
    macadamia nuts
  • 1 1/2 c
    cashews
  • 1/2 c
    dates, pitted
  • 1/4 c
    dried coconut
  • 6 Tbsp
    coconut oil, melted
  • 1/4 c
    raw lime juice
  • 1/4 c
    pure maple syrup, raw honey, or raw agave nectar
  • 1
    sundried vanilla bean or 1 tbsp vanilla extract
  • 3 c
    mixed berries such as raspberries or blueberries for garnish

How To Make raw nut-cheese cake (vegan)

    Soak the cashews and macadamias in water in separate bowls for at least 5 hours.

    Pulse macadamia nuts and dates in food processor to a sticky crumb-like consistency. Sprinkle dried coconut on bottom of 8-inch pie pan. Press macadamia nut mixture onto coconut to make crust.

    Place cashews, coconut oil, lime juice, maple syrup, vanilla and 6 tablespoons of water in a food processor and process until smooth fluffy puree texture.

    Pour mixture onto crust, and freeze 2 hours or until firm. Remove from freezer, slice while frozen, and serve with berries!!! Let it defrost to get soft or eat it as a hard slice!
