Here is another simple recipe that I created for our S'mores bar. For those who don't care for chocolate this one is a winner. In addition, to those who love pumpkin flavored goodies this is a win, win recipe too. The ginger snaps have such great flavor and when paired with a pumpkin cheesecake mixture, roasted or toasted pumpkin mallows and pecans it is one great taste sensation! My three nephews Rhyan, Brendan & Noah absolutely loved this combination! Especially Noah who doesn't do chocolate.

Ingredients For pumpkin cheesecake ginger snap s'mores

  • ginger snaps
  • pumpkin spice marshmallows
  • pumpkin dip mixture ---powdered mix with cream cheese
  • crushed salted pecans

How To Make pumpkin cheesecake ginger snap s'mores

    I made up my pumpkin cheesecake mixture the day before the party. It was a powdered pumpkin mixture that makes a dip and called for cream cheese. I would figure if you couldn't find a mixture then making your own with some pumpkin puree, cream cheese and spices would be just as good or even better. Refrigerate (I figure that the pumpkin marshmallows are a seasonal supply during late summer and fall. Oh, and they are much smaller than a regular mallow so they fit perfect in between the ginger snaps.)

    You will sandwich the melted pumpkin mallows in between ginger snaps. Then on one of the snaps smear the pumpkin cheesecake mixture and sprinkle with some salted pecans and then press together with the melted mallow and other ginger snap.

    These S'mores were a hit according to my 3 nephews, Rhyan, Brendan & Noah but especially Noah who doesn't like chocolate. I cut them off at 2 but they wanted more! LOL
