This recipe comes from a 1968 recipe book titled,"Favorite Recipes From Church of GOD Ladies". Each of the recipes has the ladies' name and home town and I will include this with the recipe and if you know or are related to this person, I would really like to know. The recipes I post from this cookbook are ones I have tried and really like or are unusual due to ingredients or possibly due to the number of recipes with the same name but are different in some way. I hope you enjoy. I know some the recipes are really lacking in some or all areas, but I am posting them as they are in the cookbook

Ingredients For pinto fiesta cake

  • CAKE:
  • 1 c
    sugar
  • 1/4 c
    butter
  • 1
    egg, beaten
  • 2 c
    cooked pinto beans, mashed
  • 1 c
    flour
  • 1 tsp
    soda
  • 1/2 tsp
    salt
  • 1 tsp
    cinnamon
  • 1/2 tsp
    cloves
  • 1/2 tsp
    allspice
  • 2 c
    diced raw apples
  • 1 c
    raisins
  • 1/2 c
    chopped nuts
  • 1 tsp
    vanilla
  • GLAZE:
  • 2 c
    confectioners' sugar
  • 1/2 c
    water

How To Make pinto fiesta cake

  • 1
    CAKE: Cream sugar and butter; add beaten egg.

    Combine beans with sugar mixture.
  • 3
    Combine flour, soda, salt and spices; sift.
  • 4
    Add to sugar mixture. Mix well.
  • 5
    Add apples, raisins, nuts and vanilla.
  • 6
    Pour into greased and floured tube pan.

    Bake for 45 minutes at 375 degrees. Remove from oven.

    GLAZE: Combine comfectioners' sugar and water.

    Remove cake from pan;
