While the traditional coffee cake is always a winner, we've found that your guests will be more impressed if you add some simple additions. Invite your friends over this weekend and impress the pants off of them with one of these fancy pants coffee cakes.

Ingredients For pear brunch cake

  • STREUSEL:
  • 3/4 c
    flour
  • 1/2 c
    light brown sugar
  • 2 tsp
    cinnamon
  • 1/2 tsp
    salt
  • 4 Tbsp
    (1/2 stick) cold butter, diced
  • 1/2 c
    almonds, sliced
  • CAKE:
  • 2 c
    flour
  • 1/2 c
    sugar
  • 3 tsp
    baking powder
  • 1/4 tsp
    salt
  • 1 1/4 c
    whole milk
  • 1 tsp
    almond extract
  • 1 lg
    egg
  • 2
    ripe pears, cored and diced

How To Make pear brunch cake

    Heat oven to 350°F. Butter two 8-inch round baking pans and set aside. To make streusel, combine flour, brown sugar, cinnamon and salt in medium bowl. Cut in butter using a pastry cutter or fork until mixture forms small to medium pieces. Mix in sliced almonds. Cover and refrigerate until ready to use.

    To make cake batter, mix together flour, sugar, baking powder and salt in medium bowl. Add milk, almond extract and egg, stirring until just combined.

    Pour batter into prepared baking pans. Sprinkle half the pears over top of each cake, pressing into cake slightly. Top each cake with half the streusel mixture. Bake 30 minutes, or until toothpick inserted into center of cake comes out clean.
