my "inside out" cake

A coworker originally gave me this very easy recipe. It is very moist because of the oil and only keeps for a couple of days (if it lasts that long). It has a very caramely smell and taste and is great for a brunch or to take it along to your morning bowling league like I have one several times.

Ingredients For my "inside out" cake

  • 1 box
    yellow cake mix (also good to use german chocolate or fudge cake mixes
  • 4
    eggs
  • 1 c
    water
  • 3/4 c
    cooking oil
  • 1 can
    coconut pecan frosting
  • confectionary sugar (optional) to sprinkle on top of cake

How To Make my "inside out" cake

    Preheat oven to 350. Grease and flour (or spray with Pam for baking) an 11 X 13 cake pan. In a large bowl, mix all ingredients except frosting on medium until well mixed. Add the frosting to the batter and stir by hand until well mixed. Pour into prepared pan and bake for the time directed on the cake mix box PLUS ABOUT 10 MINUTES (approximately 45 minutes) until toothpick comes out clean. Leave cake in pan or transfer to a cake plate as desired. You can sprinkle with confectionary sugar if you wish and serve warm or cool.
