When I was growing up, I remember my neighbor borrowing a cup of sugar from us in the fall and she would bring us back a plate with this wonderful apple cake on it. I love making this every fall and taking some to my neighbors... otherwise I would eat the whole thing!

Ingredients For mrs. wyman's apple nut cake

  • 1-3/4 c
    sugar
  • 3
    eggs
  • 1 c
    oil
  • 2 c
    all purpose flour
  • 1 tsp
    baking soda
  • 1 tsp
    cinnamon
  • 1 tsp
    salt
  • 1 tsp
    vanilla extract
  • 2 c
    apples
  • 1 c
    walnuts

How To Make mrs. wyman's apple nut cake

    Preheat oven to 350 degrees.

    Beat eggs till whipped and mix in the sugar.

    Add the oil and vanilla, mix till creamy.

    In a separate bowl, sift the flour, baking soda, cinnamon and salt together. Mix them in with the other ingredients.

    Peel and cut apples into coarse chunks. Coarsely chop the nuts. Fold both of these items into the batter.

    Turn batter into a well greased and floured 9x12 pan. Bake 1 hour or until top is dry at 350 degrees.

    Sprinkle top with sugar when slightly cool.
