This is a recipe from Allrecipes. I just love mini muffins. Something about them, seems to taste better. And, they are so cute...whatever, I know that sounds silly! Just make some & enjoy!

Ingredients For mini pumpkin butterscotch muffins

  • cooking spray
  • 1 3/4 c
    all-purpose or unbleached all-purpose flour
  • 1/2 c
    brown sugar, packed
  • 1/2 c
    white sugar
  • 1 tsp
    ground cinnamon
  • 1/2 tsp
    ground ginger
  • 1/2 tsp
    ground nutmeg
  • 1 tsp
    baking soda
  • 1/4 tsp
    baking powder
  • 1/2 tsp
    salt
  • 2 lg
    eggs
  • 1/2 c
    melted butter
  • 1 c
    canned pumpkin puree
  • 1 pkg
    (6 oz) butterscotch chips

How To Make mini pumpkin butterscotch muffins

    Preheat oven to 350°F. Grease mini-muffin pan with cooking spray.

    Sift together the flour, white sugar, spices, baking soda, baking powder, and salt, in a large bowl.

    Whisk together the eggs, melted butter, brown sugar, and pumpkin, in a separate bowl. Add flour mixture, to the egg mixture.

    Stir in butterscotch chips; pour batter, into each cup, to about 3/4 full.

    Bake, in preheated oven, until they test clean, with a toothpick, 10-12 minutes. Makes 48 muffins.
