This recipe was one that belonged to my great-great grandmother, Minerva Modlin, who was born in 1898 and died in 1966. She made this cake for her children and grandchildren-and they all enjoyed it. My great-aunt copied down the recipe many years ago and allowed me copy it down, so I could learn to make it. It is out of this WORLD!

Ingredients For minerva's prune cake

  • 1 1/2 c
    granulated sugar
  • 1 c
    butter or margarine, softened
  • 3 lg
    eggs
  • 2 c
    self-rising flour
  • 1 tsp
    cinnamon
  • 1 tsp
    cloves
  • 1 tsp
    nutmeg
  • 1 c
    prunes, cooked and mashed
  • 1 tsp
    vanilla
  • BUTTERMILK ICING
  • 1 c
    granulated sugar
  • 1/2 c
    buttermilk
  • 1/2 stick
    butter or margarine
  • 1 tsp
    baking soda
  • 1 tsp
    vanilla

How To Make minerva's prune cake

    Preheat oven to 300 degrees. In a large mixing bowl, beat the sugar and butter until light and fluffy. Add eggs, 1 at a time, beating well after each addition. Sift together the flour and spice and add to mixture, alternating with 1 cup buttermilk. Stir in prunes and vanilla. Stir until smooth. Spread into either a 10 inch tube or bundt pan or a 9 x 13 inch baking dish. Bake for 1 hour. Cool slightly.

    Bring the sugar, buttermilk, butter and baking soda to a boil. Boil until slightly thickened and drizzles off a spoon. Remove from heat and add 1 teaspoon vanilla. Pour over slightly cooled cake.
