I absolutely love Key Lime Pie and cheesecake, so what is better than putting the two together. My best friend is also a lover of both, but she doesn't make either. So we were scheduled to have a bbq and I was told to bring dessert, and so since I had the limes, I put this together, and it was a hit by all!!

Ingredients For key lime cheesecake

  • FILLING
  • 4 (8 oz) box
    cream cheese, room temperature
  • 1/2 c
    sugar
  • 4 lg
    eggs, room temperature
  • 1/2 c
    key lime juice, more for stronger flavor
  • 2 Tbsp
    flour
  • CRUST
  • 1 c
    graham cracker crumbs
  • 1/4 c
    brown sugar
  • 8 Tbsp
    butter, melted
  • 1/2 c
    toasted walnuts, crushed
  • TOPPING
  • 1 c
    sour cream
  • 2 Tbsp
    brown sugar
  • 1 tsp
    vanilla extract

How To Make key lime cheesecake

    Crust: Blend graham cracker crumbs, walnuts, and sugar together. Mix in melted butter. Press into the bottom and sides of a springform pan wrapped in foil. Bake at 350 F for 10 minutes. Cool completely.

    Preheat oven to 325 F. Cream together the boxes of cream cheese until smooth. Add eggs, 1 at a time, scraping down sides of bowl and mixing completely. Add sugar mixing completely. Add key lime juice and flour and mix together. Pour into a 9" springform pan with cooled crust and bake 1 hour. The top may split during baking, but it goes back together when cooling.

    Raise oven temperature to 425 F. Mix sour cream, brown sugar, and vanilla together. Spread over top of cheesecake and bake 5 minutes. Chill completely (6-8 hours) before serving.
