The lady next door, when I was little, was like a mother to me. Her name was Parthenia. After I was married she still stayed close. Had my husband and I over many times for dinner. This was one of her recipes and one of our favorites. Thanks Par!

Ingredients For key lime cake

1 1/3 csugar

2 call purpose flour

1/2 tspsalt

1 - 3 ozpkg of lime jello

1/2 tspbaking soda
-
1 tspbaking powder

5eggs
-
1 1/3 ccanola oil
-
3/4 corange juice, unsweetened

1/2 tspvanilla
-
1 tsplemon extract
-
1/3 ckey lime juice
-
1/3 cpowdered sugar
-
whipping cream, whipped for garnish

thin lime slices, for garish
How To Make key lime cake

1Preheat oven to 350. Place dry ingredients into a mixing bowl.

2In seperate bowl, add eggs and oil. Mix till creamy. Add orange juice, vanilla, lemon extract and dry ingredients. Beat till well blended.

3Pour batter into a greased and floured 9x13 pan. Bake for 35-40 minutes. Remove cake from oven and let stand in pan 15 minutes or until just about cooled.

4In small bowl mix lime juice and powdered sugar.

5Poke holes in cake with a fork. Drizzle all over with the lime juice and powdered sugar mix. Cover and refrigerate.

6To serve, cut into squares and top with whipped cream and lime slices. You can use Cool Whip in place of whipped cream.
