Grandma used any excuse to make her carrot cake. It was one of my favorites as a child and I'm happy to pass it on to the next generation.

Ingredients For grandma's carrot cake

1 1/2 coil (i use canola)

4eggs

3 cshredded carrots

1/4 tspblack walnut extract

2 cself rising flour

1 tspcinnamon

1 tspvanilla

1 cwalnuts
How To Make grandma's carrot cake

1mix all ingredients together in a large bowl.

2Bake in a tube pan greased and floured at 350 for 1 to 1 1/2 hours.

3While cake is baking prepare the topping: 1 cup white sugar 1/2 cup buttermilk 1 Tablespoon white corn syrup mix and stir constantly - let come to a rolling boil boil 5-7 minutes. Pour over cake when it comes from the oven.

4Let cake cool in pan.
