Grandma used any excuse to make her carrot cake. It was one of my favorites as a child and I'm happy to pass it on to the next generation.

Ingredients For grandma's carrot cake

  • 1 1/2 c
    oil (i use canola)
  • 4
    eggs
  • 3 c
    shredded carrots
  • 1/4 tsp
    black walnut extract
  • 2 c
    self rising flour
  • 1 tsp
    cinnamon
  • 1 tsp
    vanilla
  • 1 c
    walnuts

How To Make grandma's carrot cake

    mix all ingredients together in a large bowl.

    Bake in a tube pan greased and floured at 350 for 1 to 1 1/2 hours.

    While cake is baking prepare the topping: 1 cup white sugar 1/2 cup buttermilk 1 Tablespoon white corn syrup mix and stir constantly - let come to a rolling boil boil 5-7 minutes. Pour over cake when it comes from the oven.

    Let cake cool in pan.
