Grandma used to fix this for my dad's birthday. She would use a plain vanilla icing on it then cover the iced cake with coconut. Yummm!

Ingredients For grandma's carrot cake

2 cunsifted flour

2 Tbspbaking soda

2 tspground cinnamon
-
1/2 tspground ginger
-
1/2 tspsalt
-
3eggs
-
1 1/2 csugar
-
3/4 cmayonnaise - (not miracle whip)

1 can8oz crushed pineapple in juice
-
2 ccoarsely shredded carrots
-
3/4 cchopped wallnuts or pecans
How To Make grandma's carrot cake

1Grease & flour 2 round baking pans (8in). Set oven to 350 degrees and bake for 30 to 35 minutes.

2in medium bowl stir together first five ingredients, then set aside.

3In large bowl with mixer at medium speed beat next 4 ingredients until well blended. Gradually beat in flour mixture until well blended. With spoon stir in carrots & nuts, turn into prepared pans and bake. When cooled use favorite frosting.
