I don't remember where I got this recipe, but I know I've had it for a very long time because of the recipe card it's printed on! I haven't made it in a while, but it has 4 stars (my top rating) on the card.

Ingredients For gingerbread

  • 1 1/2 c
    all purpose flour
  • 1/2 tsp
    baking powder
  • 1/2 tsp
    baking soda
  • 1 tsp
    salt
  • 1 1/2 tsp
    ground ginger
  • 3/4 tsp
    ground cinnamon
  • 1/3 c
    vegetable oil
  • 1/2 c
    brown sugar, firmly packed
  • 1
    egg, well beaten
  • 1/2 c
    molasses
  • 1/2 c
    boiling water

How To Make gingerbread

    Preheat oven to 350° In small bowl or pan, mix molasses and boiling water; set aside.

    Mix and sift first six ingredients. Make a well in center and add, in order, oil, brown sugar and egg. Add molasses and water mixture. Beat until smooth.

    Turn into greased 8" square pan. Bake at 350° for 35-40 minutes. Cut into squares and serve warm with lemon sauce and/or whipped cream.
