Ingredients For fruit cake with a kick

  • 1 lb
    butter, softened
  • 1 lb
    brown sugar
  • 12
    eggs
  • 1 lb
    flour
  • 2 lb
    golden raisins
  • 4 lb
    candied mixed fruit
  • 2 1/2 lb
    seedless dates chopped
  • 1 lb
    brazil nuts (optional)
  • 1 lb
    pecans
  • 1/2 lb
    english walnuts
  • 1/2 lb
    black walnuts
  • 1/2 lb
    almonds
  • 1
    jar strawberry jam
  • 1
    jar fig preserves
  • 1
    large apple (peeled and chopped)
  • 2 tsp
    cinnamon, cloves, mace, and allspice
  • 3 c
    apricot brandy..you can use any fruit flavor you want

How To Make fruit cake with a kick

  • 1
    soak candied fruit, apple, and raisins over night in the brandy.

    chop and flour all the nuts. set aside
  • 3
    sift flour and spices together. cream butter, sugar, and eggs together then add to flour mix. fold in fruit, nuts, and preserves.

    grease brown paper on both sides cut to fit either 1 tube pan or 4 loaf pans.

    place pans in a water bath and bake at 275 degrees till a tooth pick comes out clean

    use red and green candied cherries on top for decorations
