Headnotes from the book: Forget the jelly and jam. These bars are all about pure peanut butter flavor. They're great when made with the chunky all natural variety, choose a brand without any added sugar. The chocolate chips are optional, but if you're a fan of peanut butter cups, you may want to add them.

Ingredients For fat witch peanut butter bars

  • 2 lg
    eggs
  • 1 c
    granulated sugar
  • 1/2 c
    packed light brown sugar
  • 1/2 c
    chunky peanut butter
  • 1 tsp
    pure vanilla extract
  • 2 Tbsp
    unsalted butter, softened to room temperature
  • 1 1/4 c
    unbleached flour
  • 1 tsp
    baking powder
  • 1/2 tsp
    salt
  • 1/2 c
    semisweet chocolate chps, optional, but very good

How To Make fat witch peanut butter bars

    Grease and flour a 9x9 baking pan. Preheat oven to 350 degrees.

    Beat the eggs and both sugars until smooth. Add the peanut butter and continue mixing until well combined. Beat in the vanilla and butter and mix until thoroughly incorporated.

    Measure the flour, baking powder and salt and sift directly into the batter. Mix gently until well combined and no trace of the dry ingredients remains. Using a wooden spoon, stir in the chocolate chips. Spread the dough into the 9x9 pan with a spatula. Bake for 25 minutes or until toothpick inserted into the center comes out clean or with only crumbs, not batter, on it. Allow to cool for 1 hour before cutting.
