I've had this recipe for 30 yrs. My friend Creagh always made this for our Christmas breakfast buffet. It uses 1 1/2 cups of butter, but is simply delicious and easy to make. It is so good with coffee or tea, but makes a good, easy dessert too. It is placed in a COLD OVEN to start.

Ingredients For creagh's cinnamon coffee cake

  • 1 cup
    butter
  • 1 cup
    sugar
  • 2
    eggs
  • 1 cup
    milk
  • 3 cups
    sifted all-purpose flour
  • 3 tsp.
    baking powder
  • 1/2 tsp.
    salt
  • 1 tsp.
    vanilla
  • TOPPING
  • 1 cup
    brown sugar
  • 1 cup
    chopped nuts (your choice)
  • 2 Tbsp
    flour
  • 1 Tbsp
    ground cinnamon
  • 1/2 cup
    melted butter

How To Make creagh's cinnamon coffee cake

    cream well the 1 cup butter and 1 cup sugar. Add eggs, and beat well. Add milk and sifted dry ingredients alternately.

    For Topping, mix together the 1 cup brown sugar, 1 cup chopped nuts, 2 tbsp. flour, and 1 tbsp. cinnamon.

    Put 1/2 the dough into greased 9/13 inch pan. Sprinkle half of the topping over the dough. Pour half of the melted butter over the filling (1/4 cup). Repeat steps with remaining half of dough,(may need to use a spatula to smooth out dough, as it is a bit sticky) continue with remaining topping, and remaining 1/4 cup melted butter. Don't stir or swirl topping into batter.

    Place pan in a COLD oven. Set oven at 350 degrees. Bake 35-40 minutes.
