We have a local bakery that makes cookies and creme cupcakes. We love them but wanted more oomp I guess is the way to put it. So this is my twist. Hope you enjoy

Ingredients For cookies & creme cake

  • CHOCOLATE CAKE RECIEP
  • 1 c
    butter, cold
  • 4 Tbsp
    cocoa power
  • 2 c
    ap flour
  • 2 c
    sugar
  • 1/4 tsp
    salt
  • 1 c
    boiling water
  • 1 c
    buttermilk
  • 1 tsp
    baking soda
  • 1 Tbsp
    vanilla extract
  • 2
    eggs, beaten
  • 1 pkg
    creme filled chocolate cookies
  • CHOCOLATE FROSTING
  • 3 c
    heavy cream
  • 24 oz
    semi-sweet baking chocolate
  • 1 Tbsp
    vanilla
  • 3 c
    powdered sugar
  • CREAM CHEESE FROSTING
  • 36 oz
    cream cheese, softened
  • 1 c
    butter, softened
  • 3 c
    powdered sugar
  • 1/2 c
    heavy cream

How To Make cookies & creme cake

    Preheat oven to 300*

    Mix flour, sugar, and salt in one bowl.

    Melt butter, add cocoa powder. Stir until well mixed. Add boiling water and boil for 30 seconds. Be careful this will boil over if not watched. Pour over flour and lightly stir to cool.

    Combine milk, baking soda, vanilla and BEATEN eggs together. Stir into chocolate batter. Pour into flour coated pans (the flour nonstick spray). Only fill half way then push oreos down in the batter. I think I used 5-6 and had one in the center. Do this for each layer too. Bake 60-90 minutes, until toothpick is clean

    While the cakes bake, prepare you frosting. Chocolate frosting- heat cream until very hot, add chocolate, stir until it's melted. Once chocolate is fully melted, add in powdered sugar slowly. Mix well.

    Cream cheese Frosting- Cream butter and cream cheese together. Slowly add heavy cream and continue cream. Add powdered sugar gradually. It will be thick once done.

    Cake assembly- Do chocolate frosting then a thick layer of cream cheese and another layer of chocolate frosting. Keep doing this for each layer. (I set my layers in the freezer for about 10 minutes to let the frosting set up) For the top- Do a thin layer of cream cheese across the very top. Spread the chocolate frosting across the rest of the cake. Sides, top etc. Before letting the chocolate settle, set in the oreos on the top. You can drizzle chocolate frosting across them if you like.
