These are delicious coconut mini bundt cakes with a mix of a coconut filling inside. Very nutty! If you love coconut flavored desserts, this one packs on a punch!

Ingredients For coconut blaze mini bundts

  • 1 box
    yellow cake mix
  • 1 sm
    box of vanilla pudding mix
  • 3 lg
    eggs
  • 8 oz
    sour cream
  • 1 c
    water
  • 1/3 c
    vegetable oil
  • 1 Tbsp
    baking powder
  • COCONUT FILLING
  • 1 stick
    butter
  • 3 Tbsp
    flour
  • 1 1/2 c
    sugar
  • 1 c
    milk
  • 1 tsp
    vanilla extract
  • 1 c
    coconut, shredded
  • 1/2 c
    pecans, chopped
  • OPTIONAL:
  • 1 can
    vanilla frosting, melted, drizzled

How To Make coconut blaze mini bundts

    PREHEAT OVEN TO 350 degrees. Mix: Yellow Cake Mix Vanilla Pudding mix 1T - baking powder Mix in: 1 cup of water 1/3 cup of oil 8oz sour cream 3 lg eggs

    Coconut Filling/Frosting: In a med saucepan, over med heat, melt 1 stick of butter. Whisk in: 3 Tablespn flour 1 1/2 cups sugar Then Slowly Pour In: 1C. of milk Whisk until thickened, about 10 mins. Remove from heat and stir in: 1t - vanilla extract 1c - coconut, shredded 1/2 c. pecans, chopped

    Pour 2/3 of the batter into each bundt cavity. Then scoop about 3T of the frosting into the center of the batter, spreading evenly. Top with about 1/3 of batter. Batter should fill about 3/4 to the top. You can pour in less amount of batter if you like, this is just how I prefer it.

    Bake for 20 minutes. Remove from oven and allow cakes to sit for about 15 minutes before turning out onto the serving plate. Allow cake to cool completely.

    Then fill each cake cavity with remaining frosting. I then melted a small jar of vanilla frosting and drizzled frosting lightly over cakes and topped more coconuts!
