Who doesn't love carmel apples? I have been making this cake for 35+ years and it continues to be a hit every time I make it. The ribbon of cream cheese throughout just adds a nice touch to an already fantastic cake. It is a little time consuming -- but well worth the effort.

Ingredients For carmel apple ribbon cake

  • 3 c
    all purpose flour
  • 1/2 tsp
    salt
  • 2 1/2 tsp
    baking powder
  • 1 c
    brown sugar
  • 1 c
    white sugar
  • 1/2 c
    applesauce
  • 1/2 c
    vegetable oil
  • 4
    eggs
  • 1/4 c
    orange juice
  • 2 tsp
    vanilla extract
  • 5
    apples, peeled and grated
  • FILLING:
  • 1
    8oz cream cheese, room temperature
  • 1/4 c
    white sugar
  • 1
    egg
  • CARMEL DRIZZLE
  • 1/4 c
    butter
  • 1/4 c
    brown sugar
  • 1 tsp
    half and half

How To Make carmel apple ribbon cake

    Preheat oven to 350 degrees F (175 degrees C). Grease one 10 inch tube pan or Bundt pan.

    In a small mixing bowl, combine the cream cheese, sugar and egg. Beat till smooth.

    In a large mixing bowl, combine the flour, salt, baking powder and sugar. Stir in the applesauce, vegetable oil, beaten eggs, orange juice and vanilla. Mix well. Stir in grated apples.

    Pour 1/2 of the batter into the prepared pan. Top with the cream cheese filling, keeping in centered and away from the edge. Spread the remaining batter over the top.

    Bake at 350 degrees F (175 degrees C) for 55 to 65 minutes. Remove from oven and allow to cool 5 minutes before removing from pan.

    While cake is cooling, in small saucepan mix Carmel Drizzle ingredients. Bring to a rolling boil and cook for 1 minute stirring constantly. Set aside and allow to cool.

    After cake has cooled pour Carmel Drizzle over top of cake and allow to run down the side. Sprinkle with chopped walnuts or pecans if desired.
