Aunt Tour was my father's oldest sister. She lived to be 101 years old. She was a remarkable person. Helped her mother and 8 siblings survive the Great Depression. Went to college and graduate school. Became the Director of Public Health in Portsmouth, VA. And still managed to be everyone's favorite aunt (there were about 21 cousins, I'd say) and NEVER forgot a birthday or Christmas gift for any of us! She was also an acclaimed cook, using the old methods of her Victorian mother, my grandmother. This cake she made I have seen several versions of, and it's always a favorite. I'm posting it so my relatives can get a copy of it.

Ingredients For aunt tour's fruit cocktail cake

  • CAKE INGREDIENTS
  • 1 1/2 c
    sugar
  • 1/2 c
    vegetable oil
  • 2
    eggs
  • 2 c
    plain flour
  • 2 tsp
    baking soda
  • 1/2 tsp
    salt
  • 1 can
    fruit cocktail with syrup (15 oz can)
  • TOPPING INGREDIENTS
  • 1 stick
    butter
  • 3/4 c
    sugar
  • 1/2 c
    evaporated milk
  • 1 tsp
    vanilla flavor
  • 1/2 c
    chopped pecans

How To Make aunt tour's fruit cocktail cake

    CAKE: Beat eggs; add sugar and oil and mix well. Sift flour, salt, & soda and add to egg mixture. Add fruit cocktail with syrup. Mix with electric mixer until fruit is well mixed.

    Pour into greased and floured tube pan. Bake for 45-50 minutes at 325 degrees. Cool 10 minutes in pan. Remove, and frost while still warm with this topping:

    TOPPING: boil milk, sugar, and butter for about 5 minutes. Add nuts and vanilla. Pour over cake while still warm.

    We like assembling this cake in a large glass bowl. The topping will run down the sides of the cake and collect underneath, where it can be spooned over each slice. If you use a cake plate, let the topping cool somewhat first or it will run all over your cake plate and even drip off.
