This is a cake my Aunt Mimi use to make. It will make your house smell of autumn! Wonderful!!!!

Ingredients For aunt mimi's apple cake

2eggs

1 1/2 csugar
-
1/2 cshortening
-
2 cplus 2 tablespoons of flour

1 tspbaking soda

1 tspvanilla extract
-
1 tspcinnamon
-
1/2 cchopped nuts (we like walnuts or pecans)

4 cdiced apples
How To Make aunt mimi's apple cake

1Cream together the eggs, sugar and shortening. In a large mixing bowl combine the dry ingredients. Add the sugar mixture to the dry ingredients. Fold in the apples and nuts, combine well.

2Pour into a greased and floured 13x9 baking dish. Bake at 350 degrees for an hour (or a bit more). Cake is done when a knife inserted in the middle comes out clean.
