I saved this recipe about a year ago, from Allrecipes. I never got around to trying it or sharing it. So, I didn't want another year to go by, without doing so.

Ingredients For apple butter spice cake

    packed brown sugar
  • 1 tsp
    ground cinnamon
  • 1/2 tsp
    nutmeg
  • 1/2 c
    chopped pecans
  • ********CAKE********
  • 2 c
    all-purpose flour
  • 1 tsp
    baking powder
  • 1 tsp
    baking soda
  • 1/2 tsp
    salt
  • 1/2 c
    butter, softened
  • 1 c
    white sugar
  • 3/4 c
    apple butter
  • 1 tsp
    vanilla extract
  • 1/2 c
    whole bran cereal or wheat germ
  • 1 c
    sour cream
  • 2 lg
    eggs, beaten

How To Make apple butter spice cake

    Preheat oven to 350°F. Spray or grease a 9x13 inch cake pan. Prepare topping mix, by combining those ingredients, and set aside.

    Sift together first 4 "cake" ingredients, in a medium bowl. In another bowl, blend together butter and sugar; add eggs, and beat well. Add apple butter, vanilla, whole bran cereal or wheat germ.

    Add sifted dry ingredients, alternately, with sour cream, to egg mixture; mix well, after each addition.

    Pour half of batter, into pan, sprinkle half of topping over top. Pour remaining batter, and top with remaining topping.

    Bake for 40 minutes or test with wooden pick, in center, for doneness. Makes 18 servings. Nutrition: One serving 266 cal, 10.7 g fat (5.3 g sat), 43 mg chol, 224 mg sod, 88 mg potassium, 40.6 g carb, 1.1 g fiber, 3 g protein, 27.5 sugars.
