So for those unaware, flapjacks are a relative of the pancake, in whose family also resides crepes and pikelets. Other names for flapjacks include griddle cakes, hot cakes, flannel cakes or wheat cakes. Where some pancakes can be quite dense and heavy, flapjacks, which are made with self-raising flour, are on lighter side. More aerated if you will. So they're very quick to make and use super common ingredients so you won't need to make an emergency trip to the shops.

Ingredients For old fashion flapjacks

  • 1 c
    all purpose flour, sifted*
  • 2 tsp
    baking powder*
  • 1/2 tsp
    salt
  • 2 Tbsp
    sugar
  • 1 lg
    egg
  • 1 c
    milk
  • 3 Tbsp
    butter, melted

How To Make old fashion flapjacks

    * Self Rising Flour, which requires no baking powder, may be substituted.

    Sift dry ingredients together into medium bowl. In another bowl, beat egg. Add milk and butter; beat until well blended.

    Pour into dry ingredients. Beat only until combined. Batter will be lumpy.

    Meanwhile, heat griddle or heavy skillet. Use about 1/4 cup batter for each flapjack. Cook until bubbles form on surface and edges become dry. Turn; cook 2 minutes longer or until nicely browned.

    Serve with whipped butter and warm maple syrup.
