Ingredients For french toast with blueberries and apricot sauce

2 Tbspoil, diveided

1 1/4 cegg substitute

1/4 cfat free milk

1 tsporange zest
-
1 tspvanilla extract

1/2(16 oz ) loaf whole wheat italian bread, cut diagonally cut into 8 slices, divieded
- FOR SAUCE:

1container fat free or low fat vanilla yogurt
-
3 Tbspapricot fruit spread
-
1 tsporange zest
-
1 cfresh (or thawed frozen) blueberries
How To Make french toast with blueberries and apricot sauce

1place large nonstick skillet over medium hear until hot. coat skillet with cooking spray, add 1 tablespoon oil, and tilt skillet to lightly coat bottom.

2pour egg substitute, milk, zest and vanilla into a 9x13 inch baking pan. add flour, bread slices and turn several times to coat evenly. place these bread slices in skillet.

3cook 3 minutes on each side or until golden. set aside on separate plate and cover to keep warm. repeat with remaining bread slices and oil.

4combine yogurt, fruit spread and zest in blender. secure with lid and puree until well blended.

5to serve, place 2 slices of french toast on each of 4 dinner plates, spoon equal amounts of yogurt mixture on each side, and top with blueberries.

6working in 2 batches keep the bread from crowded in skillet, so it can brown properly and create a slight crust.
