Ingredients For breakfast tartines

4 slicecrusty bread (country, french, etc.)

4 slice(thick cut or slab) bacon (pancetta, proscuitto or similar will work as well)

1/2 cricotta cheese
-
1/4-1/2cantaloupe, peeled and seeded
-
fresh mint leaves
-
flaky salt, to taste (fleur de sel, pyramid, smoked salt-experiment!)
-
*good quality* honey, for drizzling
How To Make breakfast tartines

1Toast the bread slices.

2Cook the bacon until crisp, drain on paper towels and crumble into pieces.

3Spread each toast slice with 1/4 of the ricotta cheese. Slice cantaloupe thinly with a sharp knife, vegetable peeler or mandoline and arrange over the toast slices.

4Garnish each toast slice crumbled bacon, fresh mint and salt; drizzle with honey.
