This recipe gives an apple pie a healthy makeover! It replaces refined sugars, unhealthy fats, and a scoop of vanilla ice-cream with nutritious syrupy apples resting on top of a whole grain toast covered with creamy (and protein-rich) ricotta cheese. My daughter loves to wake up to the sight of this apple pie on her breakfast plate. Both my husband and I love this quick, easy, and absolutely mouthwatering treat as well.

Ingredients For apple pie-riccotta toast

  • 1 Tbsp
    canola oil
  • 2
    large granny smith apples, peeled, cored, and cut into thin wedges
  • 1/4 c
    light agave nectar
  • 1/4 c
    palm sugar
  • 1/4 tsp
    apple pie spice
  • 1/4 c
    water
  • 1 tsp
    fresh-squeezed lemon juice
  • 3/4 c
    part-skim ricotta cheese
  • 1 tsp
    lemon peel
  • 6 slice
    (3/4 inch-thick) whole grain crusty bread, toasted

How To Make apple pie-riccotta toast

    In a large skillet, heat canola oil and add sliced apples. Saute on medium-low heat for about 2-3 minutes, or until apples start to soften.

    Add agave nectar, palm, sugar, apple pie spice, lemon juice, and water and bring it to a boil. Simmer over low heat until the apples are tender and sauce is syrupy, about 10 minutes.

    In a medium-size bowl, combine ricotta cheese with lemon zest.

    Spread a generous amount of the ricotta-lemon peel mixture onto toasted bread slices. Using a slotted spoon, spoon the apples over it. Drizzle with the syrup. Serve immediately.
