My dad used to make this for us growing up, and my kids really love it too. I don't like the consistency of omlettes, i only like my eggs scrambled, so this works perfectly for my family.

Ingredients For scrambled omlette

  • 8
    potatoes
  • 1
    onions, yellow, medium, chopped
  • 5-6 clove
    garlic, minced
  • 4 Tbsp
    cooking oil
  • 1 lb
    sausage, ground
  • 12
    eggs
  • 1 c
    cheddar cheese, shredded
  • SERVE WITH:
  • orange juice
  • 1
    loaf of bread, for toast

How To Make scrambled omlette

    Chop the potatoes into small pieces.
  • 2
    heat the oil in the pan. add onions and garlic and cook until the onions are transculent.

    then add the potatoes and plenty of SALT & PEPPER & OREGANO.

    cook until potatoes are done, approx 15-20 mins. stir frequently.

    in another pan, brown the sausage, then drain on paper towels.

    mix the eggs in a bowl and put aside. you could also add milk, salt and pepper to the eggs if you'd like.

    when the potatoes are done, add the sausage, the eggs, and the cheese. continue to cook until the eggs are done.
