This is wonderful as a breakfast or lunch or anytime. You can also use a round cake pan if you dont have an iron skillet.This makes one pancake.

Ingredients For baked pancake and fruit

  • 1/4 c
    butter
  • 4
    eggs
  • 1 c
    milk
  • 1 c
    all purpose flour
  • 2 c
    fresh fruit

How To Make baked pancake and fruit

    In 425 degree oven melt butter in cast iron skillet or round baking pan.
  • 2
    In bowl combine eggs, milk and flour and beat until foamy.

    Pour into hot skillet and bake at 425 degrees for 17-22 minutes till golden.

    Top with fresh fruit. I have used strawberries,kiwi,blckberries,grapes,and a peach all together. Can sift powdered sugar on top.
