These were so fun to make, the kids even got a hand in it.. I had a can of biscuits, ham, green chile's, green onions, red pepper, and eggs. Went searching for an idea, and came across a different version of these. I thought they looked easy enough, and they were. This is my version. The kids loved them..you could use any version you want, bacon, sausage, any veggies. Just a neat breakfast idea! Adapted from: Eatsnacklove.com My pictures.

Ingredients For southwestern breakfast bombs - cass's

  • 1 can
    grands flaky layers buttermilk biscuits
  • 1 Tbsp
    butter
  • 4
    eggs, beaten
  • 1/2 tsp
    red pepper flakes
  • 1/4 tsp
    pepper
  • 1/4 tsp
    salt
  • 2 Tbsp
    half and half
  • 1/2 - 3/4 c
    ham, pecooked and pre chunked, or any precooked ham
  • 2 Tbsp
    red bell pepper, diced
  • 2
    green onions, sliced
  • 1 - 4 oz
    can, green chiles
  • 1 c
    shredded cheese, i used monterey jack and cheddar
  • 1
    egg and 1 tablespoon of water, blended for egg wash

How To Make southwestern breakfast bombs - cass's

    Preheat oven to 350 degree F. Spray a cupcake tin, with nonstick cooking spray, liberally. Just spray 8 holes. I evened them out amongst the tray.

    Beat the eggs with the following 4 ingredients.

    In a skillet melt the 1 tablespoon of butter, add the eggs and soft scramble. Remove from pan to a small bowl, so they don't continue cooking.

    Prepare your other ingredients. Open the biscuits. Stretch and flatten each biscuit as much as you can, without ripping the dough. About a 6 inch circle.

    Now, Spoon about 1 1/2 teaspoons of each ingredient in the center of each biscuit. Leaving the edges free.

    Bring 4 corners up to meet; pinching slightly.

    Bring the other 4 corners in to meet and pinch to close any holes. Place the biscuits seam side down into the muffin tin.

    Scramble 1 egg with 1 tablespoon of water to make an egg wash. Brush egg wash atop each biscuit. I added some cheese atop the egg wash to mark which ones had red pepper..as my kids can be picky. You could add cheese to each biscuit just because.

    Bake for 15 - 20 minutes or until golden brown. They should pop right out of the tin.

    Serve with salsa and sour cream, or whatever you like.

    These were delicious. As I said, use any combination of filling you desire..any would work. Enjoy!
