My son named these little sammies. We quit eating fast food in 2010 but my son still craved the McGriddle. So I set out to make him the homemade, better for you (not healthy) version. We all love these! Variations: 1) No syrup in pancakes. We like them with you may not! 2) Sausage Patties instead of bacon. 3) Egg substitute. 4) Meat substitute.

Ingredients For mom griddles

  • PANCAKE
  • 1-1/2 c
    all purpose flour
  • 3-1/2 tsp
    baking powder
  • 1 tsp
    salt
  • 1 Tbsp
    granulated sugar
  • 1-1/4 c
    buttermilk (real buttermilk, only, please)
  • 1
    egg
  • 1 tsp
    vanilla extract
  • 3 Tbsp
    butter, melted
  • OTHER ITEMS
  • 8
    eggs
  • 4 slice
    american cheese
  • 8 slice
    bacon, cooked
  • pancake syrup, no need to measure, you'll only drizzle a bit into the pancake while they cook
  • SPECIAL GADGET NEEDED
  • egg fry rings (i got mine at w&s but you can find them elsewhere)

How To Make mom griddles

    Mix pancake batter as follows: In large bowl sift together flour, baking powder, salt and sugar. In a small bowl mix together buttermilk, egg, vanilla and butter. Make a well in dry ingredients and pour in wet, mix well.

    Cook bacon in oven while making pancakes & eggs.

    Using the egg fry rings add 1 tablespoon of batter (drizzle with pancake syrup at this point)and cook on medium high for about 3 minutes, then run knife along edge, remove fry ring and flip pancake to continue cooking. Do this until you have 16 little pancakes.

    Now, cook the eggs, over hard (I break the yolk) using the egg fry molds. Once you flip the eggs add 1/2 slice of cheese.

    Once everything is done cooking, assemble into little sandwiches and collect RAVES from the fam!
