Ingredients For lo-cal sausage, egg and cheese roll-ups

  • 1/2 c
    egg beaters egg substitute
  • 2
    mushrooms, sliced
  • 1/4 c
    chopped red bell pepper
  • 1/4 c
    chopped green bell pepper
  • 2 Tbsp
    chopped red onion
  • 1/2 c
    torn baby spinach leaves
  • 2
    turkey sausage patties, cooked and crumbled
  • 1/4 c
    reduced-fat, shredded cheddar cheese
  • 2
    whole wheat tortillas

How To Make lo-cal sausage, egg and cheese roll-ups

    Spray a lg skillet w/ cooking spray. In lg bowl, scarmble together egg beaters, veggies and sausage.

    Pour mix into skillet. Cook, stirring often to scramble. Add cheese, and stir until melted. Transfer to a bowl.

    Heat each tortilla in skillet on both sides until warmed. Fill tortillas evenly w/ filling. I serve w/ a splash of hot sauce.
