Turn leftover mashed potatoes into a delicious breakfast, snack, or side dish. These bacon cheddar mashed potato cakes taste like hash browns. They are slightly crunchy on the outside, and the inside is soft and creamy. Delish!

Ingredients For bacon cheddar mashed potato cakes

  • 3 slice
    bacon
  • 4 c
    cold leftover mashed potatoes
  • 2
    eggs
  • 1 tsp
    onion powder
  • 1/2 tsp
    salt
  • 1/2 tsp
    ground black pepper
  • 1 c
    shredded cheddar cheese

Make sure the mashed potatoes are cold. Ours may have been a little warm because our mixture was slightly sticky. So, we formed our cakes in the frying pan.
  • Frying slices of bacon.

    Place the bacon in a large, deep skillet. Cook over medium-high heat, turning occasionally, until evenly browned and crisp, about 10 minutes.
  • Crumbled bacon on a paper towel.

    Remove the bacon slices, crumble, and set aside. Leave the bacon drippings in the skillet.
  • Mixing mashed potatoes, eggs, seasonings, crumbled bacon, and cheddar cheese.

    Mix the mashed potatoes, eggs, onion powder, salt, and black pepper together in a bowl. Stir in the crumbled bacon and cheddar cheese.
  • Pan-frying the potato cakes.

    Form the mixture into 8 patties. Heat the bacon drippings over medium heat. Pan-fry the patties in the drippings until crisp, about 4 minutes per side.
