granola bites with figs and dates

My daughter has changed her diet a bit, so I've been looking for new things to make that have substance to them. Not liking Granola myself, I thought this would be nice for her and her sister....well we were all so pleased...they are wonderfully fulfilling and delicious. I have posted the Easy Maple Granola, also, that is called for in this recipe (or you use your favorite granola). The wonderful smell that fills your house while they are baking is wonderful also. Enjoy.

Ingredients For granola bites with figs and dates

  • 1/3 c
    unsalted butter, melted
  • 1/4 c
    liquid honey
  • 1/4 c
    pure maple syrup
  • 2 Tbsp
    packed light brown sugar
  • 1 1/2 tsp
    vanilla
  • 1
    egg
  • 2 c
    easy maple granola (see recipe posted)
  • 3/4 c
    chopped dates
  • 2/3 c
    chopped pecans
  • 1/3 c
    raisins
  • 1/4 c
    chopped figs
  • 1/4 c
    all purpose flour
  • 2 Tbsp
    sesame seeds
  • 1/4 tsp
    ground cinnamon
  • 1/4 tsp
    salt

How To Make granola bites with figs and dates

    Preheat oven to 350 degrees F. Lightly grease an 8 inch square baking pan. Line with parchment paper, leaving an overhang on two sides (for handles to remove from pan, after baking).

    In a bowl, stir together butter, honey, maple syrup, brown sugar, vanilla and egg.

    In another bowl, combine granola, dates, pecans, raisins, figs, flour, sesame seeds, cinnamon and salt. Stir into egg mixture until well blended. Transfer mixture to prepared pan, smoothing and pressing down top.

    Bake until set and top looks toasted about 20 to 25 minutes. Place pan on cooling rack until completely cool. Refrigerate for at least 1 hour to make cutting into bite size pieces easier. These bites can be stored in an airtight container at room temperature for up to 5 days. We liked them better by storing in the refrigerator.
