Created this one night after buying a new cast iron skillet and it was a big hit with everyone!

Ingredients For potatoes and eggs

  • 1 lb
    baking potatoes, cubed
  • 1
    yellow onion, coarse chopped
  • 1
    green bell pepper, coarse chopped
  • 1
    red or orange bell pepper, coarse chopped
  • 1 box
    heat n serve sausage links, rough chopped
  • 6 lg
    eggs
  • 2 Tbsp
    vegetable oil
  • salt, pepper, and garlic powder to taste
  • 3/4 c
    shredded cheddar cheese
  • 1/2 c
    shredded mozzarella cheese

How To Make potatoes and eggs

    In a large mixing bowl, mix together veggies, toss with oil and seasonings to taste (rough guess how much you typically like on your potatoes when frying)

    In a large cast iron or oven proof skillet, sprinkle the chopped sausage links. spread potato mixture on top. Cook for about 5 minutes on med-high heat, scrape up the bottom and stir. Cook until potatoes are almost tender. Top with cheddar cheese. Crack eggs on top. Top with mozzarella cheese.

    Place in a preheated oven at 400, cook until eggs are cooked the way you like, we like the yolk med-hard so about 10 min.
