This is a common Southwest/Tex-Mex breakfast recipe. But this version is a little different than the other recipes I've seen with the same title. So I thought I'd post it here for another option for anyone looking for a Tex-Mex breakfast idea.

Ingredients For fiesta egg scramble

  • 12 lg
    eggs, slightly beaten
  • 3/4 c
    heavy cream
  • 1 tsp
    salt
  • 2 Tbsp
    butter or margarine, melted
  • 1 c
    onion, chopped
  • 1 c
    red bell pepper, chopped
  • 1 c
    sliced mushrooms
  • 1
    (4-ounce) can green chilies, diced
  • 6 slice
    bacon, cooked and crumbled
  • 3/4 c
    cheddar cheese, shredded
  • 3/4 c
    monterery jack cheese, shredded

How To Make fiesta egg scramble

  • 1
    Combine eggs, cream and salt in medium bowl.

    Melt butter in a large skillet; cook onion, bell pepper, and mushrooms until tender.

    Add the chilies, bacon, and egg mixture. Cook, stirring occasionally until eggs just start to set. Sprinkle cheddar cheese and Monterey Jack cheese over eggs. Cover, and continue to cook until eggs are set and fully cooked.
