Ingredients For zucchini pancakes

  • 3 c
    coarsely grated zucchini
  • 1/3 c
    minced onion
  • 3
    eggs, lightly beatrn
  • 3/4 c
    flour
  • 3/4 tsp
    baking powder
  • 3/4 tsp
    salt
  • 1/2 tsp
    crushed oregano
  • 3-4 Tbsp
    cooking oil

How To Make zucchini pancakes

  • 1
    Press zucchini free of liquid and mix with onion and egg with a fork. Combine flour, baking powder, salt and oregano and stir into zucchini mixture. Heat a little oil in a non-stick frying pan and drop mixture By the 1/2 cup measure, brown lightly on both sides over medium heat. Makes about 10 pancakes.
