I don't remember where I got this recipe, but it sure is good! I make this on Thanksgiving and Christmas morning when we won't be eating lunch. It also great to serve when having overnight guests.

Ingredients For farmer's casserole

  • 3 c
    frozen shredded hash brown potatoes
  • 3/4 c
    shredded monterey jack cheese with jalapeno peppers
  • 1 c
    diced fully cooked ham or canadian bacon
  • 1/4 c
    sliced green onion
  • 4
    beaten eggs
  • 12 oz
    evaporated milk
  • 1/4 tsp
    pepper
  • 1/8 tsp
    salt

How To Make farmer's casserole

  • 1
    Grease an 8x8 inch baking dish. Arrange potatoes evenly in the the bottom of the dish. Sprinkle with cheese, ham and green onion.

    In a medium mixing bowl combine eggs, milk , pepper and salt. Pour egg mixture over potato mixture in dish. (You can cover the dish and refrigerate overnight).

    Bake, uncovered, in a 350 degree oven for 40 to 45 minutes (or 55 to 60 minutes if it was made ahead and refrigerated) or until center appears set. Let stand 5 minutes before serving.
