Wanting something different, I made this greek-style dish. You can have it as an appetizer or as a meal, served w/ a salad.

Ingredients For fabulous greek-style frittata

1/4 colive oil
-
1 Tbspwhite wine vinegar
-
3 tspminced garlic
-
2 tspdried oregano
-
1 tsppepper
-
1/2 tspsalt
-
1 cred bell pepper, diced
-
1/2 cred onion, diced
-
6 lgpitted kalamta olives, halved
-
10 lgeggs
-
1/3 creduecd-fat crumbled feta cheese.
How To Make fabulous greek-style frittata

1In medium bowl, whisk together oil and vinegar. Whisk in garlic, oregano, pepper and salt. Stir in red bell pepper, onion and olives.

2Heat oven to 400. Spray a 9" pie pan w/ cooking spray. In bowl, beat eggs. Drain pepper mix, blend into eggs.

3Pour into pan. Bake for 15 mins. Dot the top w/ feta cheese. Bake additional 20 mins, or until set. Sprinkle top lightly w/ olive oil. Slice into 4 slices.
