Ingredients For brunch vegetable pie

  • INGREDIENTS:
  • 2 c
    cooked, chopped broccoli, *see note
  • 1 c
    shredded cheddar cheese
  • 1/3 c
    chopped onion, lightly sauteed in butter
  • 1/2 c
    regular baking mix (bisquick)
  • 1 c
    whole milk
  • 1/2 tsp
    salt
  • 1/4 tsp
    pepper
  • 2
    eggs, scrambled

How To Make brunch vegetable pie

    DIRECTIONS: Grease a deep pie plate. Spread the cooked broccoli*, onions, and cheese in the bottom of the pie plate. Beat together the eggs, bisquick and milk. Add the seasonings. Pour into pie plate. Bake at 350 degrees for 35 minutes or until "puffy" and center is set. NOTE: I have added 1/2 cup crumbled bacon, chopped ham and have switched out the cheddar with Swiss cheese and used spinach instead of the broccoli. Nice changes with great, delicious results!

    NOTE: *I buy frozen broccoli and cook it in the microwave until done. I have simply thawed it in the microwave and drained it, then added to the recipe. I find it will still have texture when done this way. I have doubled this and bake it in a 9x13 glass dish, great results!
